This verse has been “my verse” since I was a teen and was struggling with a disappointment that had so little to do with what I wanted, and so much to do with what God wanted FOR me. It was years later that I learned, and used as the foundation for my first book, Carolina Dream, that when we literally delight in the Lord, it’s not our “wishes” that we should focus on, but instead that His desires become our desires!

Mom's Pecan Pie

I struggled to choose between two different pie recipes, both of which I received from my mother – chocolate pie, or pecan pie? Today, since I’m highlighting book 2 in the Southern Breeze Series, Carolina Mercy, I decided to pick a recipe of the pie that makes repeat appearances in the book! Pecan Pie, it is, and it’s the easiest recipe you will ever find! So easy, in fact, that you can whip this baby up during a commercial break, and then forget about it for 50-60 minutes of baking if you just HAVE to have something sweet before the night is over! Enjoy a taste of the south!

1 c. light corn syrup

1 c. brown sugar

1/3 tsp. salt

1/3 c. melted butter

1/2  tsp. vanilla

3 eggs

1 c. pecans

1-9" pie shell--1 deep-dish, or 2 bought frozen pie shells

Preheat oven to 350 degrees, Fahrenheit. Beat together all ingredients.  Pour into unbaked pie shell. Bake for 50-60 minutes, or until center is done.

Regina Rudd Merrick began reading romance and thinking of book ideas as early as her teenage years when she attempted a happily-ever-after sequel to “Gone With the Wind.” That love of fiction parlayed into a career as a librarian, and finally to writing full-time. She began attending local writing workshops and continued to hone her craft by writing several short and novel-length fan-fiction pieces published online, where she met other authors with a similar love for story, a Christian worldview, and happily-ever-after. Married for 30+ years and active in their church in Marion, KY, Regina and her husband have two grown daughters who share her love of music, writing, and the arts. Regina, that's a little different from my pecan pie recipe. Mine is the one Dear Abby posted in her column years ago. I like the looks of this one. I'll have to try it for the rest of the family. Wish I could eat it, but I better not.

Hi, Regina. Bet you didn't know that I've been good friends with Gail Pallotta for years. We go way back, met in the "Sweetest Authors" group when it was still on Yahoo. Gail and I have been prayer partners and confidantes for a long time. We've prayed each other through some tough issuses. I couldn't ask for a better prayer partner.

Gail, I'll bet you didn't know that Regina and I belong to the same local writers' group, Ken-Ten Writers. We meet at Graves County Library on 3rd Saturdays. I've veen in this group since the fall of 2012. Wow! it doesn't seem like it's been that long.

I enjoy Regina's stories. I've read Carolina Dream. It's a sweet inspiring romance. I loaned Caroline Mercy to my sister, thinking she'd get through it before I could start reading it. But . . . apparently her TBR pile was taller than I'd thought.

I should have thought about it. Somebody gave her 7 garbage bags full of Christian Romance books, (totaling 500), it could take a while to get through them. BTW: She found that she had already read 400 of those. Now she's working on the 100.

I wish both of you God's best and truly enjoyed the blurb and the pie recipe.
