Recipe The Ford family held an annual fund raiser to benefit the local homeless boys’ shelter in Oakville. A Warm Welcome to Sara Foust Sara shares one of her recipes for making the most out of leftovers and talks about one of her favorite Bible verses. I love good food and I have a lot of favorite recipes, so it was hard to pick just one. I also really like experimenting with seasonings and leftovers and creating with what I have on hand. I cook a lot by smell rather than by measurement (weird, I know). Here is one I made up because I had leftover mashed potatoes and didn’t want to throw them away. Left Over Mashed Potato Cakes 1 ½ cups mashed potatoes (I used unpeeled, red potatoes to make my mashed potatoes) 2 eggs ¼ cup bread crumbs ½ cup chopped fresh spinach 1 tbls chopped green onion Dash All Season Salt Dash pepper 2 tbls sour cream ¼ cup shredded parmesan cheese 1 tsp Worcestershire sauce Mix all ingredients in a bowl.
