This verse has been “my verse” since I was a teen and was struggling with a disappointment that had so little to do with what I wanted, and so much to do with what God wanted FOR me. It was years later that I learned, and used as the foundation for my first book, Carolina Dream, that when we literally delight in the Lord, it’s not our “wishes” that we should focus on, but instead that His desires become our desires!

Mom's Pecan Pie

I struggled to choose between two different pie recipes, both of which I received from my mother – chocolate pie, or pecan pie? Today, since I’m highlighting book 2 in the Southern Breeze Series, Carolina Mercy, I decided to pick a recipe of the pie that makes repeat appearances in the book! Pecan Pie, it is, and it’s the easiest recipe you will ever find! So easy, in fact, that you can whip this baby up during a commercial break, and then forget about it for 50-60 minutes of baking if you just HAVE to have something sweet before the night is over! Enjoy a taste of the south!

1 c. light corn syrup

1 c. brown sugar

1/3 tsp. salt

1/3 c. melted butter

1/2  tsp. vanilla

3 eggs

1 c. pecans

1-9" pie shell--1 deep-dish, or 2 bought frozen pie shells

Preheat oven to 350 degrees, Fahrenheit. Beat together all ingredients.  Pour into unbaked pie shell. Bake for 50-60 minutes, or until center is done.

Regina Rudd Merrick began reading romance and thinking of book ideas as early as her teenage years when she attempted a happily-ever-after sequel to “Gone With the Wind.” That love of fiction parlayed into a career as a librarian, and finally to writing full-time. She began attending local writing workshops and continued to hone her craft by writing several short and novel-length fan-fiction pieces published online, where she met other authors with a similar love for story, a Christian worldview, and happily-ever-after. Married for 30+ years and active in their church in Marion, KY, Regina and her husband have two grown daughters who share her love of music, writing, and the arts.
