For The Sweet Tooth

Josh and Mattie’s (and my husband’s) Favorite Peanut Butter Criss-Cross Cookies

1 cup shortening (or butter)

1cup granulated sugar

1 cup brown sugar

2 eggs

1 tsp vanilla extract

1 cup peanut butter

3 cups sifted all purpose flour

2 tsp baking soda

1/2 tsp salt

Thoroughly cream shortening, sugars, eggs, and vanilla. Stir in peanut butter. Sift dry ingredients; stir into creamed mixture. Drop by rounded teaspoons onto an uncreased cookie sheet. press with the back of a wet fork to make a criss-cross.

Bake at 350º about 10 minutes. Makes about 5 dozen cookies.

I’ve been married to my first love for forty-eight years. We have two daughters, five grandchildren, and one rescued puppy named Zoe. In our spare time, my husband and I enjoy traveling with our best buddies. Our goal is for us to visit all fifty states together. We have three left to go.

Why do you write?

I never aspired to be a writer, but I’ve always enjoyed reading. I majored in English in college because I liked grammar. Not writing. (Weird, I know.) God laid writing on my heart as a ministry much later in life. My desire is to create streams in the wasteland. Isaiah 43:19.

Tell us about your latest book.

I’d love to! My newest book is Season of Hope, and the release date is today, July 20, 2020! It’s a story about learning to forgive ourselves and to accept God’s forgiveness even though we feel unworthy. I think that’s a place we’ve all been and an emotion we’ve all experienced.

What inspired you to write this particular book?

This novel is set during and immediately after the Vietnam war. These years were a disconcerting time of rebellion and confusion. I was in high school and college at that time, and I struggled through the fear of losing friends in war, the social unrest, and societal changes. People whose lives had been full of promise suddenly found their dreams shattered. Yet, God offers redemption and healing when we turn to Him.

 What do you love about this book? And what do you hope readers will tell others about it?

I love the truth illustrated in Hope’s life - that nothing we can do will ever separate us from the love of God in Jesus. I hope readers will share that comfort with others.

He crossed off the last entry on the list. When he’d vowed to do this, he’d had no idea it would be so difficult. He’d called every entry in the phone book and every additional number he’d gotten from Information with no success.

He didn’t have enough money to hire a private investigator, and even if he had the funds, he may not have enough information for the detective to be successful.

As the evening sun shone through the gap between his bedroom curtains, the gold chain and pendant sparkled as if mocking his efforts. Opening the small Bible, he placed the necklace back between its pages and slowly folded the covers closed. He was tired. Tired of war, tired of loss, tired of failure.
Father, it’s in Your hands now. I’ve done all I know to do.

Carol James is an author of inspirational fiction. She lives in a small town outside of Atlanta, Georgia with her husband, Jim, and a perky Jack Russell "Terrorist," Zoe.

Having always loved intriguing stories with happy endings, she was moved to begin writing to encourage others as she'd been encouraged by the works of other authors of inspirational fiction.
