It’s my pleasure.

 I’m happy to share with you a Bible verse and a recipe, and tell you about my newest book!

A Bible verse which plays prominently in my latest book is 2 Corinthians 5:17.

 Therefore, if anyone is in Christ, the new creation has come: The old has gone, the new is here!

I like this verse because it reminds us that no matter what we were or what we did before we met Jesus, we have a fresh start once we turn our lives over to Him. It’s so freeing to be a new creation! Erin, the heroine of my new release, Recipes and Redemption, takes this verse a little too far, though. Because she’s been a Christian most of her life, she doesn’t have a big “before and after” change for a testimony. She feels she needs to change her life and do big things for God, but God doesn’t call everyone to do “big things.” He simply calls us to obey. The book reminds us that the everyday things we do to serve God are what matter most.

Recipes and Redemption

With a book entitled Recipes and Redemption, it’s only appropriate for me to share a recipe. In the story, Erin is building a catering business. Throughout the book, she makes all sorts of yummy foods. I share some of her recipes on my website, but here’s one that’s been a special favorite in my family. My mom always made it for our birthdays growing up, and she still makes it for my brother and me to this day!

Lady Finger Cake 

Ingredients:

12 oz chocolate chips 

two 3 oz packages of lady fingers

1 pt whipping cream

 3 tablespoons white sugar

2 tablespoons water

3 eggs, separated

1/2- to 1 tsp vanilla

Confectioner’s (powdered) sugar to taste – up to ¼ cup

Melt chocolate chips with sugar and water. Remove from heat and add egg yolks. Beat egg whites until stiff peaks form. Fold egg whites into chocolate mixture.

Whip heavy cream into stiff peaks, adding confectioner’s sugar and vanilla to taste.

Assemble the cake in a 9 x 13 dish. 1 layer of ladyfingers, followed by 1/2 the chocolate mixture, followed by 1/2 of the whipped cream. Repeat layers. Refrigerate overnight.

About Recipes and Redemption

Recipes and Redemption is the second book of a three-book series, but reads as a standalone. 

After losing both her parents and her husband, Erin is determined to make a good life for herself and her young son. She starts a catering business with the help of her marketing wiz housemate, never dreaming she’ll ever find love again.

Short Excerpt:

Erin released Oliver from his high chair and set him up in the den with his toys, then moved to the refrigerator to bring out dessert. Jason’s eyes widened. “You made ladyfinger cake?”

“Consider it a peace offering,” Erin said, as she placed the cake on the table.

“We should argue more often,” Jason said. “Ladyfinger cake is my favorite.”

Beth eyed the glass pan with suspicion. “What is a ladyfinger cake?”

Erin laughed. “No actual lady’s fingers were used to make this cake. Ladyfingers are small, oval-shaped pieces of cake. Here they’re layered with chocolate fudge and whipped cream. “Our mother used to make it for our birthdays. I thought I’d butter Jason up before leaving.”

Jason was at the cabinet getting out dessert plates. “It’s working.” 

Erin passed out thick squares of the layered dessert and poured glasses of milk, then sat back and enjoyed the reactions playing out on her friend’s faces as they savored the creamy rich sweetness. Nothing like dessert to bring people together. She took in the faces of the people who meant the most to her in the world, and reconsidered her impulsive decision to leave. She took a bite of the cake and steeled her resolve. Her whole life had been spent in Chester County. It was time to see the world.

When not in the great outdoors, she’s either at work as a scientist or at home writing stories in her pajamas.
