Easter Blessings

The powerful, miraculous Easter message Jesus lived among the Jews and the gentiles showing us his Gospel of love, telling us how to live in peace and care for each other. “Love the Lord your God with all your heart and with all your soul and with all your mind. This is the first and greatest commandment. And the second is like it: Love your neighbor as yourself.” (Matthew 22: 37 – 39) The suffering He endured illustrates how imperfect and cruel the world can be. “Now as Jesus was going up to Jerusalem, he took the twelve disciples aside and said to them, ‘We are going up to Jerusalem, and the Son of Man will be betrayed to the chief priests and the teachers of the law. I love good food and I have a lot of favorite recipes, so it was hard to pick just one. I also really like experimenting with seasonings and leftovers and creating with what I have on hand. I cook a lot by smell rather than by measurement (weird, I know). Here is one I made up because I had leftover mashed potatoes and didn’t want to throw them away. Left Over Mashed Potato Cakes 1 ½ cups mashed potatoes (I used unpeeled, red potatoes to make my mashed potatoes) 2 eggs ¼ cup bread crumbs ½ cup chopped fresh spinach 1 tbls chopped green onion Dash All Season Salt Dash pepper 2 tbls sour cream ¼ cup shredded parmesan cheese 1 tsp Worcestershire sauce Mix all ingredients in a bowl.
