A couple of my favorite Bible verses are Isaiah 43:18-19
“Forget the former things; do not dwell on the past. See, I am doing a new thing! Now it springs up; do you not perceive it? I am making a way in the wilderness and streams in the wasteland.”
These are the verses upon which I base my writing ministry, but they mean so much more to me.
My parents were married for over fifty years. But not long after my mother died, my father remarried. And Bessie entered our lives. While Bessie never tried to take the place of my mother, she loved my father. She loved me and loved my daughters as if they were her own grandchildren. She became a “stream in the wasteland” for my father and us. We were blessed to have her be a part of our family.
Bessie was an amazing cook, and today I’d like to share my favorite Bessie recipe.
Bessie’s Oven Brisket:
1) 3-4 lb brisket
Mix the following together to make a marinade for the brisket:
1 tsp. celery salt
1½ tsp. salt
1 tsp. garlic salt
1 tsp. onion salt
1 tbsp. coarse ground black pepper
2 tbsp. Liquid Smoke
2 tbsp. Worcestershire Sauce
Double-line a baking dish with heavy duty aluminum foil (enough to completely wrap the brisket). Place the brisket in the foil-lined dish. Brush marinade over all sides of the brisket. Seal the foil and place in refrigerator overnight to marinate.
Remove from refrigerator and bring to room temperature. Bake in foil at 325° for about five hours. Do not puncture the foil while cooking. Save the broth to use as gravy. Remove the cooked brisket. Let it cool and then slice it.
I like to bake this the day before, slice it, and put it back in the dish. Then I let it marinate in the broth, cover it with foil, and heat it up right before the meal.
It’s one of our family favorites…especially among the men.
(Need to use a bigger brisket? Just adjust the proportions of the marinade to cover the increase in the size of the brisket.)
