The Traveling Grilled Cheese

Because my dad was a career military officer, the longest we ever lived in one place was three years. And when the Air Force said “Move,” we moved. Sixty years ago, there weren’t fast food restaurants or grocery stores open twenty-four hours a day. So my mom had to figure out how to feed the family when nothing was open and she had no stove. Thus, she made "Ironed Grilled Cheese Sandwiches.” (To this day, my brother chooses these over a standard grilled cheese.)

Ingredients

Bread, cheese, butter, aluminum foil, and your iron.

Heat your iron.

Rub one side of a piece of foil with butter. Fold it in half, buttered sides together.

Make a cheese sandwich.

Insert your sandwich between the buttered sides of the foil (like a taco).

Hold the iron against one side of the foil until the bread is browned to your taste. Turn it over and “iron” the other side.

Grab some paper towels and enjoy.

Wow! I love your mom's creativity.

About Christmas Lights and Moonlit Nights

What could be different this Christmas? Everything.

All Leah Davidson wants is to spend a quiet Christmas with her parents on Palm Island. Her father’s recovering from surgery, so she’s volunteered to take over his decorating responsibilities. Plus, it’s a good excuse to get away from her ex-boyfriend. But then she discovers her neighbors have a Christmas visitor, too. One she has a history with.

Navy SEAL Jed  Price is spending Christmas with his aunt and uncle on Palm Island. He wants a relaxing time away from the pressures of his work, and the secluded island seems like the perfect escape. Until he sees his aunt and uncle’s neighbor.

Jed remembers Leah as the snobby girl next door. And Leah remembers Jed as the immature boy who was afraid of the water. But they’ve both changed.

Can Leah and Jed move past their earlier issues and work together to make Christmas a joyous time of love and forgiveness?

Bio:

Raised as an Air Force brat, the longest Carol James ever lived in one place was a year and a half. Maybe that’s why when she and her husband bought their first home forty-three years ago, they stayed.

Wife, mother, grandmother, and dog-mama to Zoey, Carol loves writing stories of redemptive romance. When asked the difference between redemptive romance and standard romance, she replied, “A standard romance has two main characters––a hero and a heroine. A redemptive romance adds a third. God.”

When she’s not writing, you can often catch her watching Premier League Soccer.

Yes, Suzy. My mom was one of the most creative people I've ever known. I think a lot of that came from living during the depression. They figured out how to use any and every thing they had. Nothing went to waste.

Thanks, Barb. I must say, I'm a bit partial to Jed, myself.
