The Traveling Grilled Cheese

Because my dad was a career military officer, the longest we ever lived in one place was three years. And when the Air Force said “Move,” we moved. Sixty years ago, there weren’t fast food restaurants or grocery stores open twenty-four hours a day. So my mom had to figure out how to feed the family when nothing was open and she had no stove. Thus, she made "Ironed Grilled Cheese Sandwiches.” (To this day, my brother chooses these over a standard grilled cheese.)

Ingredients

Bread, cheese, butter, aluminum foil, and your iron.

Heat your iron.

Rub one side of a piece of foil with butter. Fold it in half, buttered sides together.

Make a cheese sandwich.

Insert your sandwich between the buttered sides of the foil (like a taco).

Hold the iron against one side of the foil until the bread is browned to your taste. Turn it over and “iron” the other side.

Grab some paper towels and enjoy.

Raised as an Air Force brat, the longest Carol James ever lived in one place was a year and a half. Maybe that’s why when she and her husband bought their first home forty-three years ago, they stayed.

Wife, mother, grandmother, and dog-mama to Zoey, Carol loves writing stories of redemptive romance. When asked the difference between redemptive romance and standard romance, she replied, “A standard romance has two main characters––a hero and a heroine. A redemptive romance adds a third. God.”
