Sara shares one of her recipes for making the most out of leftovers and talks about one of her favorite Bible verses.
Left Over Mashed Potato Cakes
1 ½ cups mashed potatoes (I used unpeeled, red potatoes to make my mashed potatoes)
2 eggs
¼ cup bread crumbs
½ cup chopped fresh spinach
1 tbls chopped green onion
Dash All Season Salt
Dash pepper
2 tbls sour cream
¼ cup shredded parmesan cheese
1 tsp Worcestershire sauce
Mix all ingredients in a bowl. Form into palm-sized patties and fry in oil.
Makes approx. 7-8 patties

A Bible Verse From Psalms
My favorite Bible verse tends to change with time and life’s circumstances, but one that has always been near and dear to my heart is Psalm 147:3-4, “He healeth the broken in heart, and bindeth up their wounds. He telleth the number of the stars; he calleth them all by their names.” I love that God knows what I need whenever I am hurting, and I am humbled by the fact that He knows the name of each and every star, yet He takes the time to know me too. It is a comfort that God is present in my life each moment.
